You guys…these pancakes are our go-to weekly staple. They are SOOOOO good! And yes, while the color is evidently green, the taste, not so much. Finally, a toddler vegetable win…thank you spinach pancakes! With a hint of cinnamon and banana, they are a true (and healthy) treat for all. A friend referred to them as “Peter Pan” pancakes, and while my son is an avid Peter Pan fan, that title immediately hit home for our family. So here you go…
INGREDIENTS:
- 1 ripe banana
- 1 cup spinach
- 1 egg
- 1 cup old-fashioned oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 tbsp oil
- 1/2 cup milk or coconut milk
RECIPE:
- Blend oats in blender into a flour
- Add in rest of the ingredients, and blend until smooth
- Cook on griddle or pan (as would normal pancakes)
- Enjoy!

- Warm with greek yogurt
- Classic…with a splash of syrup
And best news yet…Mama’s, these are GREAT to make in bulk and freeze! Or, make a huge batch to store in the fridge for a busy week for breakfasts or quick healthy snacks.
